El orégano (Origanum vulgare), cuyo nombre se asocia tradicionalmente con la expresión “alegría de la montaña”, es una hierba aromática con una larga historia de uso culinario y tradicional. Es un ingrediente fundamental de la cocina mediterránea y también ocupa un lugar importante en numerosas preparaciones de la gastronomía dominicana e hispana.

Estofado de Carne

  • Sazona la carne con sal, pimienta y orégano.
  • Calienta el aceite en una olla.
  • Saltea la cebolla, el ajo y el pimiento durante 3 minutos.
  • Añada la carne y dórela por todos lados.
  • Incorpora los tomates, la pasta de tomate y la hoja de laurel, y remueve.
  • Añada el agua o el caldo.
  • Tape y cocine de 45 a 60 minutos, hasta que la carne esté muy tierna.

Versatilidad culinaria.

El orégano es una hierba aromática muy versátil que puede realzar el sabor de una gran variedad de platos. Combina especialmente bien con aderezos para ensaladas, marinadas, quesos, carnes, huevos, salsas y guisos. Puede utilizarse fresco o seco. Al secarse, sus hojas desarrollan un aroma y sabor más concentrados. Para conservar mejor sus características aromáticas, se recomienda incorporarlo hacia el final de la cocción o durante los últimos minutos de preparación,especialmente en platos que requieren una cocción prolongada.

La Bandera Dominicana con un Toque de Orégano

Ingredientes.

  • 2 tazas de arroz blanco
  • 1 taza de habichuelas rojas
  • 500 gr de carne de res para guisar, cortada en trozos
  • 1 pimiento verde (cortado en tiras)
  • 1 cebolla (Cortada en juliana)
  • 2 dientes de ajo (picado)
  • 1 cucharada de orégano seco (el secreto de un sabor auténtico)
  • 2 cucharadas de aceite de oliva
  • Sal y pimienta al gusto

Para las habichuelas

• 1 taza de habichuelas rojas
• ½ cebolla, picada
• 1 diente de ajo
• 1 hoja de laurel
• 1 cucharada de orégano seco

Preparar las habichuelas

• Remoja las habichuelas durante toda la noche.
• Escúrrelas y cocínalas en agua con la cebolla, el ajo, la hoja de laurel y el orégano durante 40 a 50 minutos, o hasta que estén tiernas.
Añade sal al gusto y reserva. y reserve.


 

Preparar la carne guisada

Calienta el aceite de oliva en una olla grande.
Sofríe la cebolla, el ajo y el pimiento.
Añade la carne y sazona con sal, pimienta y orégano. Cocina a fuego medio-bajo, agregando gradualmente un poco de agua o caldo, hasta que la carne esté tierna y jugosa.

Preparar el arroz blanco

• Cocina el arroz con agua y sal siguiendo el método habitual.
• Una vez listo, sepáralo suavemente con un tenedor. Si deseas, añade una pequeña cantidad de orégano seco para aportar un toque aromático.

Servir

• Sirve el plato combinando arroz blanco, habichuelas rojas y carne guisada, creando los colores característicos de La Bandera Dominicana y resaltando la riqueza de la gastronomía dominicana.

Pollo Guisado Dominicano

Un clásico de la cocina dominicana, lleno de sabor, color y tradición. El orégano aporta un aroma característico que complementa el pollo, los vegetales y las especias de este tradicional guiso.

Ingredientes

  • 1 pollo entero, aproximadamente 1,5 kg, cortado en trozos
  • 2 cucharadas de aceite
  • 1 cebolla grandeen juliana
  • 1 pimiento verdecortado en tiras
  • 1 pimiento rojocortado en tiras
  • 4 dientes de ajopicados
  • 2 cucharadas de pasta de tomate
  • 2 tomates maduros,picados
  • 1 cucharadita de orégano seco
  • 1 hoja de laurel
  • ½ cucharadita de comino
  • ½ cucharadita de pimienta negra
  • 1 cucharada de pimentón, (opcional)
  • 1 cucharada de salsa Worcestershire
  • 1 cucharada de vinagre blanco
  • 2 tazas de agua o caldo de pollo
  • Sal al gusto
  • Cilantro o perejil fresco picado,para decorar

Marinar el pollo

  • Sazona el pollo con sal, pimienta, ajo, comino, orégano, salsa Worcestershire y vinagre.
  • Mezcla bien deja marinar durante 30 minutos o hasta 2 horas para obtener un sabor más intenso. 

Dorar el pollo

• Caliente el aceite en una olla
• Dora los trozos de pollo por todos sus lados. Retira el pollo y reserva.

Preparar la base del guiso

• En la misma olla, sofríe la cebolla, los pimientos y el ajo.
• Incorpora la pasta de tomate y los tomates picados. Cocina durante 3 a 5 minutos, hasta obtener una salsa espesa y aromática.

Cocinar a fuego lento

  • Devuelve el pollo a la olla.
  • Añade la hoja de laurel, el orégano restante y elcaldo o agua.
  • Cocina a fuego medio-bajo durante 35 a 45 minutos, o hasta que el pollo esté completamente cocido y tierno y la salsa haya espesado. haya espesado

(Creole Seasoning) Stewed chicken is the daily lunch in any Dominican home. The characteristic touch that sets the Dominican stew apart from others in the region is the dominance of dried oregano rubbed in the hands right before cooking.

Ingredientes clave:

• 2 a 3 libras de pollo cortado en trozos.
• 1 ½ cucharadas de orégano dominicano seco.
• 1 cebolla morada y 1 pimiento verde (o pimiento cubanela), picados.
• 4 dientes de ajo, picados. Jugo de 1 lima o naranja amarga.
• 2 cucharadas de pasta de tomate. 1 cucharadita de azúcar y cilantro fresco.

Preparation:

Wash the chicken with the lime juice.
Season it by combining the garlic, salt, pepper, and most importantly, take the dried oregano in the palm of your hands and rub it over the chicken to crush it finely and activate its essential oils.
In a caldero (pot), add a splash of oil and the teaspoon of sugar. Let it caramelize until it turns a dark golden color (without letting it burn black). Add the chicken pieces.

is a traditional dessert known for its soft, fluffy, and moist texture, infused with a delicate vanilla aroma. It is one of the most popular sweet treats for family gatherings, birthdays, and special occasions.

Ingredientes
• 4 green plantains
• 1 large cassava bread (casabe)
• 2 tbsp butter
• ½ cup milk or hot water
• 1 red onion, sliced
• 2 tbsp oil
• 1 cucharada de orégano seco
• 200 g frying cheese
• 4 eggs
• Avocado (optional, for serving)

Instrucciones paso a paso• Peel the green plantains and cut them into medium-sized chunks.
• Boil them in water with salt for 20 to 25 minutes, until they are completely tender.
• Drain the plantains and reserve a small amount of the starchy cooking water.
• Mash the plantains while they are still hot, gradually adding the butter and milk (or reserved cooking water) until you achieve a creamy purée.
• In a skillet, heat the oil and sauté the red onion until it is translucent and slightly golden.
• Fry the cheese until it forms a golden crust on the outside and stays soft on the inside.
